Brihadeeshwara Temple is a Hindu temple dedicated to Shiva located in Thanjavur in the Indian state of Tamil Nadu. It is also known as Periya Kovil, RajaRajeswara Temple and Rajarajesvaram. It is one of the largest temples in India and is an example of Dravidian architecture during the Chola period. Built by emperor Raja Raja Chola and completed in 1010 AD, the temple turned 1000 years old in 2010. தஞ்சை மாவட்டத்தில் உள்ள பல்வேறு கொள்முதல் நிலையங்கள் மற்றும் புனல்குளம் பிள்ளையார்பட்டி உள்ளிட்ட சேமிப்புக் கிடங்குகள் இருந்து 2 ஆயிரம் டன் நெல் 240 லாரிகளில் தஞ்சை ரயில் நிலையத்திற்கு எடுத்து வரப்பட்டன பின்னர் நெல் மூட்டைகள் சரக்கு ரயிலில் இருபத்தி ஒரு வேகங்களில் அழகாக சென்னைக்கு அனுப்பி வைக்கப்பட்டது. இதேபோல் தஞ்சையில் உள்ள சேமிப்பு கிடங்குகள் மற்றும் அரிசி ஆலைகளில் இருந்து ஆயிரத்து 150 டன் அரிசி லாரிகளில் ஏற்றி வரப்பட்டு சரக்கு ரெயிலின் வேகங்கள் மூலம் ராமநாதபுரத்திற்கு அனுப்பி வைக்கப்பட்டது.
தஞ்சையில் ஸ்மார்ட் சிட்டி திட்டத்தின் கீழ் தஞ்சை கீழவாசல் சரபோஜி மார்க்கெட் பகுதியில் இருந்த கடைகள் அகற்றப்பட்டு அங்கு ரூபாய் 14 கோடி செலவில் 304 கடைகள் கட்டப்பட்டன இந்த கடைகள் அனைத்தும் கட்டப்பட்டு பொது ஏலம் விடப்பட்டன இதையடுத்து தற்போது கடைகளை ஏலம் எடுத்தவர்கள் அங்கு கடைகளை அமைத்து வருகிறார்கள்.
தேவையான பொருட்கள் : இஞ்சி – 150 கிராம்உளுத்தம் பருப்பு – 2 ஸ்பூன்நல்லெண்ணெய் – 1 ஸ்பூன்சிவப்பு மிளகாய் – 6துருவிய தேங்காய் – கால் கப்கறிவேப்பிலை – சிறிதளவுபுளி – நெல்லிக்காய் அளவுவெல்லம் – சிறிதளவுஉப்பு – தேவையான அளவு செய்முறை : இஞ்சியை தோல் நீக்கி துண்டுகளாக நறுக்கிகொள்ளவும். வானலியில் நல்லெண்ணெய் விட்டு உளுத்தம் பருப்பை போட்டு வறுத்த, பின் காய்ந்த மிளகாய், நறுக்கிய இஞ்சித் துண்டுகள், புளி சேர்த்து வதக்கவும். இறக்கும்போது கறிவேப்பிலை சேர்த்து வதக்கவும். அனைத்தும் நன்றாக ஆறியதும் மிக்ஸியில் தண்ணீர் இல்லாமல் அரைக்கவும். அடுத்ததாக அதில் துருவிய தேங்காய், வெல்லம் சேர்த்து மீண்டும் அரைக்கவும். துவையலுக்கு ஏற்ப சிறிதளவு தண்ணீர் சேர்த்து, தேவையான அளவு உப்பும் சேர்த்து அரைக்கவும். தேவைப்பட்டால் நல்லெண்ணெய் விட்டு கடுகு, கறிவேப்பிலை சேர்த்து துவையலில் தாளித்து ஊற்றலாம். இல்லையெனில் அப்படியேவும் சாப்பிடலாம். சுவையான இஞ்சி துவையல் தயார்.
தேவையான பொருட்கள் முந்திரி – 10 பருப்புகள் (2 மணி நேரம் ஊறவைக்கவும்)பாதாம் பருப்பு – 10 (வெந்நீரில் ஊற வைத்துத் தோலுரிக்கவும்)தேங்காய்த் துருவல் – 1/4 கப் (விழுதாக அரைக்கவும்)சர்க்கரை – 1 1/2 கப்நெய் – 1/2 கப்கிஸ்மிஸ் – விருப்பத்திற்கேற்ப செய்முறை தண்ணிரில் ஊறிய பாதாம் மற்றும் முந்திரியை மிக்ஸியில் போட்டு நைஸாக அரைத்துக் கொள்ளுங்கள். அரைத்த முந்திரி, பாதாம் கலவையை ஒரு பாத்திரத்தில் போட்டு, தேங்காய் விழுதையும் சேர்த்து, சர்க்கரை சேர்த்து கிளறிக் கொண்டிருங்கள். கலவை கெட்டியாகி இறுகி வரும் போது உருக்கிய நெய்யை அதில் ஊற்றிக் கிளறுங்கள். பிறகு கிஸ்மிஸ் பழங்கள் சேர்த்து அல்வா பதம் வந்தவுடன் இறக்கி, பாத்திரத்தில் எடுத்து வைத்துப் பரிமாறவும்.
